A long standing friend, Dr. Galanti decided to emerge from retirement to deliver this quick and easy sauce recipe as we are starting up BBQ season 2008. Thanks very much Dr.G..
Dr. Galanti's North Carolina Piedmont BBQ Sauce
Yield: Makes enough for two big slabs.
Preparation time: About 25 minutes.
Ingredients
3 cups apple cider vinegar
1/8 cup Frank's Red Hot Original hot sauce (NO SUBSTITUTES)
3/4 cup dark brown sugar firmly packed (of course)
1 1/2 tablespoons salt
3 teaspoons crushed red pepper
3 teaspoons finely ground black pepper
Whisk these ingredients together in a sauce pan and bring to a boil. Once at the boil turn down to simmer for 15 minutes. Then let it cool. When cool, put sauce in a jar for later use. Sauce is always better when it has had 24 hours to cure.
But if you just can't wait, go ahead and slather the sauce on your little piggy while it is on the pit, spit, or grate. You won't be disappointed.
